This year, I'm feeling the love instead of the bitter with Valentine's Day. I don't know why, just am. Maybe it's all the chocolate and bacon I'm eating. My cholesterol's probably through the roof, but I have a smile on my face so who cares!
Last weekend I was bored, and began pondering the Treats Truck jamwiches and their deliciousness. I decided it was time to try my hand at some jamwiches. Now, they couldn't just be circular; no, they had to be heart-shaped for this Hallmark holiday. Cute! Amazingly, I don't have much experience with peanut butter cookies. I tend to just eat peanut butter out of the jar with a spoon, rarely does it stay around long enough to bake with. I do love the peanut butter cookie recipe from Joy of Cooking. Rolling out the dough worked best while it was very cold, and in small batches. Just a little too much heat and prodding, and it would start fracturing everywhere (I'm assuming the fat was warming up and wrecking havoc.)
The cookies survived rolling and cutting quite well, they came out of the oven with crunchy exteriors and chewy interiors. Then I started experimenting with the preserves (I only buy preserves, not jam.) First, the jamwich would ooze when bitten into, not good. Scraping the bottoms of the cookies ended up being the trick I was missing; it controls the ooze by giving some traction. Sort of like stepping on snow instead of black ice. In the end, both the raspberry and strawberry sandwiches ended up being delicious and devoured by Brownie, Lil Bobo, Lawman, Cathy, Erin, Mommsie, and various menfolk at my job.
