Mmm, Mmm, Mint Whoopie Pies from This Chick Bakes

Some of you might know that I celebrated my birthday last week. I had birthday bread pudding and birthday chocolate caramel tart, which incidentally was just about one of the best things I've ever eaten, but let me state for the record that I have yet to partake of any official birthday cake and that includes this delicious Mint Whoopie Pie from This Chick Bakes...

Now I know Blondie goes to Joe at Grand Central nearly every morning for her coffee so when I saw the whoopie pies I did a double take. What?! Whoopie pies?! Whoopie pies in midtown?! Are you holding out on me, Ms. Blondie?

The nice lady behind the counter told me they usually put the whoopies out in the afternoon (probably after they finish up with the day's doughnuts). I've tried a few whoopie pies in the city and this was the best by far. The cake was moist and chocolatey and the filling had just the right amount of sweetness. While I wouldn't have minded a more favorable filling to cake ratio, all in all this was a satisfying treat.

Yeah, I love the more, more goo in the center as well, but here's the drag about being a wholesaler....baking someplace else and then transferring them all over the city and Brooklyn...they turn into a giant mess by the time they get to their destination. Things will be soooo different when I have my own fabulous bakeshop. Oh sweet lord, do I have some sweet ideas that need launching. And by the way, we got our first mention in NY Magazine the other day...check it out!!

wow congrats on the mention!! This whoopie filling does look a little weak. I was wondering what you guys thought of the whoopie pie at Royale Bake shop downtown, if you've ever had them?

@GG Merkel: Hmmm. Haven't tried the whoopies at Royale yet. Actually I haven't seen them any of the times I've been there. I'll have to keep my eyes out for it.
