I don't have the best track record with yeast. I've killed more than my fair share of yeast beasts due to overheating, but with these doughnuts I got a nice double rise with a packet of instant yeast. By the time the doughnuts hit the oil however they weren't quite as poofy as I would have liked. Inspired by Blondie's drool-inducing Flex Donuts post on Midtown Lunch I dipped these in browned butter glaze and sprinkled with bacon. They weren't half-bad (though I'll admit that even cardboard wouldn't be half-bad after some browned butter glaze and bacon).
Still, there's room for improvement. So, I'll put it to you, dear readers. Do you have a great yeast doughnut recipe you can recommend? I want to perfect these babies so they are light and tender. Help a girl out!
